Are you someone who enjoys spending their Sunday afternoons watching a football game at your local brewery that hosts food trucks almost every day? Well, do I have the spot for you.
From 12-5 p.m. on Oct. 6, the Brewing Projekt, located in downtown Eau Claire, hosted Rex-Mex, a local, authentic Mexican food truck.
The Rex-Mex food truck offered a variety of Mexican dishes including tacos, burritos, nachos and walking tacos as main dishes. The day I visited, the truck’s protein options were shredded beef and pulled pork.
My suggestion: The nachos
I ordered the nachos with pulled pork, salsa verde, queso, lettuce, tomatoes, tortilla chips and beans. I am usually more of a steak taco girl, but the queso on the nachos was the dealbreaker in this decision.
I am not the biggest bean lover when it comes to my usual meals — I know, controversial — but surprisingly I enjoyed the beans in my nachos. The nachos I ordered could easily have been shared with one or two other people because of how generous the serving was.
We all know how delicious Chipotle and other fast food Mexican restaurants in Eau Claire are, but I highly suggest checking out Rex-Mex. I could taste how fresh the products were and the staff was extremely friendly.
Even though Rex-Mex isn’t always stationed in Eau Claire, in the three seasons they’ve been in business, they’ve been at The Brewing Projekt multiple times.
Staff suggestion: Pork and salsa verde burrito
Rex-Mex often switches up its menu for different events, so every time you see this truck it’s an adventure.
Personally, I love a good food truck experience, especially at a brewery. Most breweries have local food trucks on site because many breweries don’t have a kitchen, and food and a cold beverage go hand in hand.
Breweries also allow for people to try a variety of different food categories, and they are an opportunity for local restaurants to expand their reach.
Mariel, a worker at the Tex-Mex food truck, said her favorite part of the job is traveling to different places and seeing new people and things.
The amazing food and drinks and the relaxing environment at Rex-Mex and The Brewing Projekt were the perfect way to start my week.
